Easy, low carb dessert cups

Who says low carb eating can’t be delicious? Try this simple recipe in honor of National Cooking Day!

A friend of mine recently shared a recipe with me after I was complaining about needing a treat after dinner (thanks Robyn!). I follow a low carb eating plan so anything with sugar is out for me (as it should be for this sugar addict!).


What I love about the recipe is that it’s super simple and on top of that, so yummy. This one was an instant hit in my home and I think you’re going to like it too.


Low carb dessert cups


Ingredients:

1 envelope of gelatin

3 T. water

2 c. heavy whipping cream (1 pint)

½ c. water

1 tsp. vanilla extract

¼ c. Swerve (or other low carb sweetener)


Ingredients for low carb dessert cups: 1 envelop gelatin, 2 cups heavy cream, ½ cup and 3 tablespoons water, 1 teaspoon vanilla extract, ¼ cup Swerve

Directions:

  1. Put 3 T. of water in a small bowl and sprinkle the gelatin over it. Set it aside to solidify.

  2. Bring the cream and ½ c. of water to a bowl in a saucepan. Keep stirring.

  3. Add vanilla and sweetener and stir.

  4. Remove from heat and add in gelatin. Stir until the gelatin is melted in completely.

  5. Pour mixture into small glass containers and refrigerate. I poured the mixture from the saucepan into a 4-cup measuring cup with a spout to make this process easier. I have found the small round Pyrex containers or ramekins work perfectly for an individual serving. Make the portions as large or small as you like. (I get 7 individual dessert cups).

  6. Serve once the mixture has solidified.
